Recipe: Semolina Cake For Mum

Ingredients:
1 ½ cup fine semolina
1 cup plain yogurt 1/2 cup sugar (adjust to taste)
1/4 cup vegetable oil or melted butter
1 ½ tsp baking powder
1/2 tsp baking soda
1/2 cup milk
1 tablespoon lemon juice or vinegar
1 tsp orange blossom water (optional)
Finely grated zest of Orange or Lemon (optional)
For garnish (optional): Sliced almonds, pistachios, or any nuts of your choice

Instructions:

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a cake pan or line it with parchment paper.

Mix Dry Ingredients: In a mixing bowl, combine the fine semolina, baking powder, baking soda, and salt. Mix well to ensure even distribution of the leavening agents.

Prepare Wet Ingredients: In another bowl, whisk together the plain yogurt, sugar, vegetable oil or melted butter, vanilla extract, and lemon juice or vinegar until the sugar is dissolved.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring continuously to avoid lumps. Mix until you get a smooth batter.

Adjust Consistency: Depending on the thickness of the batter, you may need to adjust the consistency by adding milk. Add milk gradually until you get a smooth, pourable batter. The consistency should be similar to pancake batter.

Pour Batter into the Pan: Pour the batter into the prepared cake pan and spread it evenly using a spatula.

Garnish (Optional): Sprinkle sliced almonds, pistachios, or any nuts of your choice on top of the batter for added flavour and texture.

Bake: Place the cake pan in the preheated oven and bake for 25-30 minutes, or until the cake is golden brown on top and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Once cooled, slice and serve your delicious eggless fluffy semolina cake!

Variation: To make it vegan one can replace Milk, Yogurt, butter with and vegan milk or coconut milk and coconut yoghurt. I have not tried vegan products so cannot comment much on taste, but I think using coconut milk, and yoghurt would add to a delicious taste if you like coconut.
